Restaurant Outlet Manager - Pre-Opening

Born from Chef Izu Ani’s love affair with French culture, cuisine, and the art of gathering, La Maison Ani is an inspired concept set within effortlessly elegant surroundings. The concept celebrates French cuisine throughout the day—from artisanal breads, viennoiseries, and pastries to relaxed daytime dining and an elegant brasserie experience in the evening.

As we prepare to open this exciting new location, we are looking for an exceptional Outlet Manager to play a key role in bringing the La Maison Ani experience to life.

About the Role

This is a unique opportunity to join the pre-opening team of one of Fundamental Hospitality’s most celebrated home-grown concepts and take ownership of the successful launch and day-to-day operations of the new La Maison Ani at Mall of the Emirates.

As Outlet Manager, you will be a hands-on and inspiring leader responsible for building, leading, and developing a high-performing team while ensuring exceptional operational standards and memorable guest experiences from day one. You will work closely with senior leadership throughout the pre-opening journey, supporting operational readiness, team recruitment and training, and the implementation of service and brand standards ahead of opening.

Once operational, you will oversee all aspects of the outlet, driving service excellence, commercial performance, team engagement, and consistency across every guest touchpoint.

Key Responsibilities

• Play an active role in the pre-opening process, ensuring the outlet is fully operationally ready for a successful launch

• Support the recruitment, onboarding, training, and development of the opening team

• Implement and uphold La Maison Ani’s operational, service, and brand standards across all areas of the business

• Oversee all day-to-day restaurant operations, ensuring efficiency, consistency, and exceptional execution

• Lead by example on the floor, creating a visible and inspiring leadership presence for both the team and guests

• Deliver an outstanding guest experience by anticipating needs, resolving concerns, and consistently exceeding expectations

• Drive team performance through effective coaching, training, feedback, and performance management

• Manage staffing levels, scheduling, and productivity in line with operational requirements and business needs

• Monitor financial and operational performance, including revenue, costs, budgets, and KPIs

• Implement effective cost-control measures while maintaining the highest standards of quality and service

• Ensure full compliance with health, safety, hygiene, and all relevant regulatory requirements

• Analyze guest feedback and operational reports to identify opportunities for continuous improvement

• Work closely with senior leadership on business initiatives, promotions, strategies, and revenue-driving opportunities

• Foster a positive, collaborative, and high-performance culture aligned with the values and standards of Fundamental Hospitality

• Proven experience as an Outlet Manager, Restaurant Manager, or in a senior management position within a premium or luxury dining environment

• Pre-opening experience within a high-end and high-volume restaurant concept is highly desirable

• Strong understanding of all-day dining, premium casual dining, and luxury hospitality operations

• A natural leader with the ability to build, motivate, train, and develop high-performing teams

• Strong commercial awareness with experience managing budgets, costs, KPIs, and P&L performance

• Excellent communication, problem-solving, and organizational skills

• Highly hands-on, proactive, and operationally driven, with exceptional attention to detail

• A genuine passion for hospitality and delivering warm, intuitive, and memorable guest experiences

• Ability to thrive in a fast-paced pre-opening environment and adapt quickly as the business evolves

• Fluency in English is essential; additional languages are an advantage
